30 minute meal: Rice and Veggie skillet

 My husband and I are working on eating more veggies. I am struggling so much to find recipes that will fill up my strong hubster, but also keep us under budget. (If you have any recipes in mind, please let me know in the comments, I need more ideas!)

This recipe came through on all accounts. It is a vegetarian meal, inexpensive, fills you up, and best of all…it’s delicious! 

Poor Benjamin, we had this delicious meal and all he had was:

1 Tablespoon Oil
1 cup sliced zucchini 
1 cup sliced yellow squash
1/2 cup diced onion
1 1/2 cups black beans (You can also use one can of black beans, drained)1 cup diced tomatoes
3 cups cooked white or brown rice 1/3 cup shredded Cheddar 
1/3 cup white cheese (I used mozzarella, but you could also use Monterrey Jack) 

1. Heat oil in a non-stick pan over medium heat. Add the zucchini, yellow squash and onions. Cook for 5-10 minutes, stirring occasionally.
2. Add the beans and tomatoes. Cook for another 5 minutes. 
3. Stir in the cooked rice. When it is all mixed together, let it heat through for another 5 minutes on medium low heat.
4. Add shredded cheese, mix in and let melt. 
5. Serve and enjoy!

    Looks & sounds really good! I don’t mind rice but I can’t eat a bunch of it by itself – I sometimes add ground beef or something like that but veggies is a much healthier idea. I will have to try it sometime.
