Quick and Easy Taco Salad

Wondering what to do with those leftovers from Cinco de Mayo? 

Here is a healthy, could be vegetarian, and quick answer for you. 

This is a fantastic taco salad, and so simple to make with those Mexican food leftovers. We had fajitas a few nights ago, and I had a lot of extra meat and fixins (as we say in Texas).

My husband was eating this as is, when I asked him if he was going to add the dressing. He told me he didn’t want the extra calories. Well, guess what? The salad dressing is good for you too!

Quick and easy meal. And you know, we had leftovers of THIS meal, so tomorrow, I can throw all those leftovers into a tortilla and make a delicious burrito. 
Also, I paired my salad with this recipe for black bean and corn salsa. It added sweetness to each bite. 

If you wanted to do something crazy, leave out the meat and make this a vegetarian meal!

Quick and Easy Taco Salad, Perfect for Leftovers

This delicious and easy meal, comes together in a flash to make a perfect weeknight meal. You can easily adapt it to be vegetarian as well.


  • Dressing:
  • 1 cup plain, Greek Yogurt
  • 2 large avocados, smashed
  • 2 Tbs Fajita Mix
  • Salad:
  • 1 Head of Romaine Lettuce
  • 3 tomatoes, diced
  • 1 cup black beans
  • 1/2 cubed cheese (I used Monterrey jack, but you could use anything)
  • 1 lb chicken fajita meat - or however much you have
  • 2 large avocados, diced
  • 1 cup of corn
  • 1/2 cup cilantro leaves
  • 1/3 cup green onions, sliced


  1. 1. Mix up the salad dressing by adding the smashed avocados to the Greek yogurt and mixing in the fajita mix. Set aside.
  2. 2. Chop the romaine lettuce into bit sized pieces, then add all the ingredients and mix thoroughly. Drizzle the dressing over the top, or serve it on the side.
  3. 3. Top with tortilla chips, if desired.

I was too excited to eat this to remember to add the tortilla chips before taking the pictures.
