Homemade and Healthy Zucchini Bread

My toddler doesn’t like vegetables. My husband isn’t really a fan either. I’m holding out hope for Benjamin, but that doesn’t look promising considering how he projectiles the spinach out of his mouth each time the spoon goes in.



That is why I love recipes that are delicious enough to hide all evidence of veggies.

Take a smoothie for example, I could add spinach and no one would know! (Well, except for the green color…)


This zucchini bread is tasty, healthy AND it isn’t green. Thus all the evidence of veggies is successfully hidden from anti-veggie-eating eyes.

Homemade and Healthy Zucchini Bread


  • 1 1/2 cups white flour
  • 1 1/2 cups whole wheat flour
  • 1/2 teaspoon salt
  • 1 1/2 teaspoon baking powder
  • 1 teaspoon baking soda
  • 2 teaspoons ground cinnamon
  • 2 eggs
  • 1 teaspoon vanilla
  • 1 cup honey
  • 3/4 cup applesauce
  • 1/4 cup vegetable oil
  • 3 cups shredded zucchini
  • 1 cup chopped walnuts


  1. Preheat oven to 325 degrees F. Grease two loaf pans.
  2. Mix all the dry ingredients together.
  3. Beat together the eggs, vanilla, honey, applesauce and oil and mix well.
  4. Combine the dry and wet ingredients together and mix until just incorporated.
  5. Stir in the zucchini and nuts.
  6. Pour batter into the greased loaf pans.
  7. Bake for 55 minutes, or until a toothpick inserted comes out clean.
  8. Let cool before eating.

    Great looking recipe! If your family will eat spaghetti or pizza or calzones, you can hid a tremendous amount of shredded veggies in there!

    I LOVE zucchini bread! When I was growing up we used to joke that if you left your car unlocked at church, you might end up with a bunch of zucchini stowed away in there. lol People who grew them couldn’t get rid of them fast enough!

    Zucchini Bread is one of my very favorite things!! It makes me think of baking with my nana and summers in the garden 🙂

      I love it when foods bring back fond memories. Chocolate chip pancakes will forever make me think of my mom cooking them on Saturday mornings!

    I like the idea of hiding the vegetables inside of bread. I normally cover them in large amounts of cheddar cheese to get the kids to eat them. Though I suspect the cheese is negating the health benefits of the veggies.

      Haha, yes, I do that too! I’ve just create a recipe that is totally GENIUS about getting kids to eat their veggies. I’m going to be famous. (Okay, not really, but I am excited about it!)
