Whole Wheat Pancake Mix

There is just something about waking up to mama cooking pancakes on the griddle. I remember my mama doing it when I was a little one. I hope to create special memories over pancakes with my munchkins.

Here’s the thing, I want healthy pancakes.

I also want them to taste good.

It’s hard to make cute teddy bear pancakes that delight their eyes, only to have them eat it and have it disgust their taste buds.

After trying out a ton of different mixes, I finally found one that worked for us. This whole wheat pancake mix is tasty, it is made with mostly whole wheat flour (you could do all whole wheat, but we liked it with a little white).

You can make it even healthier by adding fresh fruits over top. I don’t usually put syrup, powdered sugar or anything on top of my pancakes. I just eat them dry and they are still so yummy.

I also usually substitute coconut oil for the butter.

Whole Wheat Pancake Mix

  • 6 cups whole wheat flour
  • 3 cups white flour
  • 3/4 cup sugar
  • 6 Tablespoon baking powder
  • 5 teaspoon salt

  1. Combine all the dry ingredients together.
  2. When ready to eat, combine 2 cups mix with 1 1/2 cups milk, 1 egg and 1/4 cup butter

What are your favorite pancake toppings?

I just made these and they were by far THE BEST pancakes I’ve ever made! I LOVED the coconut oil substitute… It added wonderful flavor! Even my husband who hates coconut oil was raving about them. And you couldn’t even tell they were whole wheat! Thank you do much for the winning recipe!
