Healthy Blueberry Coffee Cake

You know something fun about summer?

It’s hot.

Okay, that isn’t so fun. At least not in Texas, where it’s five thousand degrees (slight exaggeration). You know what is REALLY fun about summer?

It’s blueberry season.

Which means, you can make all kinds of fun blueberry treats.

Take this blueberry coffee cake, for example.

This isn’t just a breakfast treat either, it’s great for lunch, as a snack, a dinner side salad. Well, this might not really qualify as a salad, but you can try.

It’s fairly simple to make.

Normally, you would put it in a cake pan, but I spiced things up a little and made it in a bundt pan.

The best part about this coffee cake? Other than the blueberries, I mean. The fact that it is a healthy blueberry coffee cake! Well, as healthy as you can get with a coffee CAKE.

Healthy Blueberry Coffee Cake


  • Coffee Cake
  • 1/2 cup melted butter
  • 1/4 cup applesauce
  • 3 eggs
  • 2 tsp baking powder
  • 1 1/2 cups white flour
  • 1 1/2 cups whole wheat flour
  • 1 cup nonfat milk
  • 1 cup sugar
  • 1 tsp vanilla
  • 2 cups blueberries
  • Crumb Topping
  • 1 1/2 cups white flour
  • 2 tsp cinnamon
  • 1/2 cup sugar
  • 1/2 cup margarine softened


  1. Coffee Cake:
  2. Combine all ingredients EXCEPT blueberries, beat until well mixed.
  3. Fold in the blueberries very gently (you don't want a big, blue mess on your hands)
  4. Pour the mixture into a greased bundt pan, spreading evenly.
  5. Sprinkle the crumb mixture over top
  6. Bake at 350 for 35 minutes, or until a toothpick comes out clean
  7. Crumb Topping
  8. Combine all ingredients and mix until crumby
  9. Sprinkle on top of the coffee cake
