My family and I have a thing for spinach. We love putting spinach in much of our recipes. Adding spinach to eggs? Sure! Make a smoothie out of them? Of course! Add them to your chocolate cake, why not? (Kidding on that one, no one messes with my chocolate.)
I have lately been crushing on spinach salads, I have my mom to thank for that. She made me one during our visit to Seattle and I have been thinking about it ever since.
Now, I’m not usually one for bacon, but this Wilted Spinach Salad with Bacon and Egg calls for it and just wouldn’t be the same without it.
This throws together super easy for a weeknight meal. Or just a lunch for mamas to enjoy when their kids are at school. I REALLY wouldn’t recommend this for mamas of little ones, since our lunches consist of whatever is leftover from the kids on the high chair or on the ground. Who has time to eat lunch with two littles running around? I mean, really?
Back to the salad.
