Spinach Walnut Apple Salad

It’s that time of year again.

The time of year when people go crazy for pumpkin.

They want pumpkin lattes, pumpkin candles, pumpkin cream cheese. Would you believe I even saw some pumpkin egg nog at the grocery store? It’s true and it seems pretty nasty, if you ask me.

I’ll take some pumpkin, but this time of year has me going a different direction.

I don’t go ga ga for pumpkins, I go ape over apples. (Can you tell I have a preschooler in the house?)

Maybe it’s because I grew up in Washington state, or maybe it’s just because I love apples like Bubba loves his shrimp.

Whatever it is, I’m buying up apples in bunches. I wish so much that I lived next to an orchard, or maybe had a good friend with one. Then we could take all the extra apples that they didn’t want. I’m sure we could find many good uses for them.

Spinach walnut apple salad.

It’s fresh, it’s tasty and it just feels like fall.

Top it off with some homemade maple dressing and you have a winner!

Spinach Walnut Apple Salad


  • Salad
  • 5 cups of fresh spinach, washed
  • 1/2 cup caramelized walnuts
  • 1 cups of apple, cut into bite sized pieces (1 large or 2 smaller apples)
  • 1/3 cup feta cheese
  • 1/3 cup dried cranberry
  • Maple Dressing
  • 1/4 cup cider vinegar
  • 2 tablespoons pure maple syrup
  • 1 tablespoon Dijon mustard
  • 1/4 teaspoon kosher salt
  • 1/3 cup olive oil


  1. Combine all the salad ingredients and set aside.
  2. Make the salad dressing by combining ingredients and mixing together.
  3. Pour the dressing over the top of the salad and mix gently
  4. Serve
