I’ve decided that one good thing about being pregnant in the summertime is all the fresh fruits and veggies that are in season. Now, I know it isn’t summer yet, but I’m getting ready. For some reason, I have been craving salads lately.
This is much different (and much preferred) from my usual craving of chocolate chip cookies. Thanks to my mother in law, I usually have a solid supply of those at the end of my pregnancy.
Here’s the thing, I can’t just eat leaves. Just eating lettuce and arugula in a salad doesn’t do much for me. However, if I add some fresh mozzarella cheese, then it changes the game completely.
Not so with Greg. I give Greg a bowl full of salad and he usually makes some comment about how I must have left the window open because there are a bunch of weeds on his plate.
First of all, if I had left the window open, the weeds wouldn’t come flying in and land on his plate.
Second, these weeds are MUCH prettier and tastier than the ones in the yard. We aren’t goats!
This spinach arugula avocado salad is like a combination of a yummy salad with leaves and a caprese salad. Two things I am totally into right now.
Add a meat for your main course and you have a simple meal. I added some salmon, cause in my mind, you can’t ever go wrong with salmon. Unless you overcook it, then you went wrong. You went WAY wrong.
